Forgotten brew

Recommended Posts

Your timing is fine.  With some strong brews, I have needed to leave the beer in the keg for 4 weeks before bottling while the yeast finished turning initial byproducts into tasty beer, and there shouldn't be any problem until at least 6 weeks in the keg.  Even with more than that, the advice would be to go ahead and bottle it, for carbonating and conditioning, to see how it turns out.  Dumping it should only be considered if you found after allowing plenty of conditioning that it had a bad infection or is hard to drink for some other reason

it's all a matter of getting experience.  Welcome to the forum, and enjoy the journey as you learn!
