Fermentation Time when Raising Alcohol Content

I have heard a lot about adding adjuncts and other sugar-based foods for the yeasts in an effort to raise alcohol content. I am just curious how long you ferment for when brewing a batch at such a high alcohol content, and how can you tell the batch has been fully fermented?

When the krausen has died down on top... When there are no more bubbles rising to the top of the fermenter... Try shining a flashlight on one side of the keg, if it looks fairly clear, it's probably good to go.... And, take a taste test. If it tastes for the most part like flat beer, it's probably good to go.
