I brewed an American lager. Used yeast under lid, fermented 2 1/2 weeks, carb 3 weeks and bottle conditioned in fridge for 3 weeks. The beer is good but it tastes like green olives.  What's wrong with it?

"Good but tastes like green olives" is an oxymoron.  No beer should taste like green olives, nor have I ever seen that description.

I'd suggest pulling bottles out of the fridge and letting them go another 3 weeks at room temp.

Here are common off-flavors and reasons:

Let them condition at room temperature.

green olives?? apples maybe but olives? lol.   I concur. take them out and put them in a warmish spot like 70f and leave them set for a couple more weeks.

watch your  fermentation temperatures next time.
