curious about octoberfest

What would happen if i add a couple boosters and a cup of brown sugar like some other recipes call for maybe an LME? Would it be best to use an lme at all or just the brown sugar?

-  Booster will up the ABV without affecting the flavor.

-  Brown sugar when devoured by yeast will leave a bit of a molasses taste plus some ABV.  Molasses flavor in an Oktoberfest just doesn't sound appealing.

-  An LME will add about 1% ABV and will affect the final taste and color of the beer to varying degrees.  Any LME would complement the Oktoberfest with the exception (IMNSHO) the Robust.

 

Here's a list of all MRB Recipes that use LME (or DME) and the Oktoberfest HME.  Taking a look at them might give you some insight and inspiration in to what you might want to try and brew.

Oktoberfest with one of the MB LME packets will be very good. They sell the deluxe kit with the smooth LME. I am not a fan of adding booster, I would rather add more malt, for flavor and body.

Find a local homebrew store if you can, and buy a 1lb bag of dried malt extract. It's by far the easiest / cheapest way to spruce up your Mr. Beer recipe kit.

You might want to spend some time reading the stickies at the top of the forum, and reading through posts that discuss your questions.  Lots of good info to read.

 

A way to cheat on conditioning time is to look at the original gravity of a recipe.  Us the last digits, often a 4, 5, or 6, as the minimum number of weeks you should wait.  

 

But the reality is that everyone has different tastes.  Go 4 weeks, take ONE bottle and refrigerate for 3 days, then try it.  Do another bottle at 6 weeks, and another at 8.  See what YOU like for that recipe.
