  1. I'm drinking Swen's Belgian IPA right now (Diablo with trappist yeast, a hop boil, and some honey/DME) and it is quite good. Haven't had the Diablo straight up, but this variation is good. This is the first of the new extract brews that I've really cared for, to be honest.
  2. Blackstone Adam Bomb IPA was rated in a blind pairing test in the Great American IPA Challenge as the best IPA in the country. They took 16 of the best rated IPAs on RateBeer and paired them up for blind tastings. The testers learned that name recognition and reputation has some effect on your perception of a beer, as the normal IPAs people name (Bell's, Dogfishhead, etc.) all ended up at the back of the pack, while relative unknown from Nashville won outright. Love that I can get it when I'm up north in Nashville. I really like that IPA (as well as several on this list). Glad Adam finally got his named beer out there (Blackstone names their beers after the kids of the owner... Adam, Charles, Chase, etc...). As a side note, the brewer at Blackstone, Dave Miller, is a homebrewing legend who went pro a long while back. He has great homebrewing books out that are available on Amazon and elsewhere, including his classic Homebrewing Guide and the new Brew Like a Pro. (click image for story)

    The ingredients in the wort will not affect carbonation. Only the addition of sugars at bottling will affect carbonation. I would recommend (in order of preference) adding some malt extract (either liquid or dry... both available at any online or local LBS or thru Mr. Beer) to add more ABV. Booster will work if used in limited amounts. Honey and sugar will add to ABV as well, but the product will suffer.
  4. Definitely the Pride of Ringwood, IMHO. The bottles from the new extracts that I have tasted, along with my exp with Coopers Sparkling (which is a good test, as PoR is the only hop used in that one) made that clear to me. Likely why I'll never buy any of the extracts from here or Cooper's, though I all-grain now so I may not have anyway. Just don't really care for that hop flavor...
  5. It'll be fine... You won't get the starches you would get from mashing, but you should get some flavor/color.
  6. You are spot-on. Why buy bottles when you likely have plenty of opportunity to get usable commercial bottles. I can't speak for caps on Mr. Beer's site, as they are cheaper at the local brew store so I've never bought from Mr. Beer. Of course, a cap is a cap, so the Mr. Beer ones are fine...

  8. Mr. Beer's old Novacaine recipe used 5 of those old sized cans, as well as hi-grav yeast and four packs of hops. So, you certainly can use that many cans. But... that recipe was like $60 pre-shipping, so you're getting into the $3/12 oz bottle range, which is pretty ridiculous if you ask me...

  10. The can makes one gallon-ish of 20 IBU beer. Two cans would make 2 gallons-ish of 40 IBU beer. I don't see two different contexts here.
  11. I'd soak in PBW or Oxyclean Free and cold water and then rinse it out well.
  12. Seems to me that if Mr.Beer isn't providing what you need, you should branch out. If you're looking for an extract kit that is pretty much equal in complexity to the Mr.Beer ones, the Munton's Gold Old English Bitter or Highland Heavy; Munton's Old Ale, Bitter, or Nut Brown; Mountmellick Export Ale; Coopers Classic Old Dark or English Bitter; or Woodforde's Wherry Bitter, Nelson's Revenge Special Bitter, or Admiral's Reserve Strong Ale (among others) might be to your liking. Most of those are available on Amazon, at a LHBS, or at an online HBS, and, as discussed ad nauseum in the last month, all are much cheaper than Mr.Beer.
  13. Sprinkling the yeast on top is "pitching the yeast." I'm not sure how you're suggesting that they are different. "Pitching" is simply a brewer's term meaning to add the yeast to the fermenter. Now, if you are saying that they should suggest that you rehydrate or create a starter, I can understand that, but what is your distinction between sprinkle and pitch?

Heartwarming.Exactly. At Christmas 2010, the prices increased $3. Now the prices have increased another $2 or so. I haven't done an extract brew in a year or more so it doens't affect me at all, but it doesn't seem like a wise plan. And there is no way that that can is going to hit 3.7%, btw. Count on 3.2-3.3%. There just isn't enough extract there to hit their inflated number.
