  1. That sounds like a LOT of honey for 2 gals, as I have used the same 5 pounds for 5 gals. The mead wait seems awful, but my experience is that it is WELL worth it.
  2. If you can find a local orchard that does not pasturize but uses UV to treat their apple cider, you will have an even better result. That may be hard to find. The UV treated apple juice will start brewing in just 3 days with the cap removed and allowed to be exposed to the wild yeast in the air. The downside is that if left to its own devises it will turn into wonderful apple cider vinager in a few more weeks.
