  2. Would a DME be a suitable substitute for the booster called out for Rose's Ranging Ale?
  3. I'm trying to brew Rose's Rambling Red using an ingredient other than booster. I don't like using booster.

  8. I've made the Howlin' Red Ale 3times now. It's a very good version of a red ale. I used S-O4 with the last batch and it is awesome!
  9. I use my well water that comes from over five hundred feet below the surface. It's what you might call "source" water. PH about 6.2 and low mineral content. Sweet water! It makes some really awesome brews so I've been told by others!
  10. My experience with stouts, porters and some ales the longer you bottle condition the better. I have some Stagger back and a chocolate-coffee stout that are about 2 months in the bottle that just keep getting better. I almost want to eat the glass when it's empty!
  11. I made a chocolate coffee stout using the Sunday Morning Coming Down recipe and added Dutch process cocoa like theOle Mole Stout. Also added the brown sugar called out for Ole Mole Stout. I bottled it four weeks ago and tasted it at that time. Very rich tasting with coffee, chocolate. I'm going to let it condition for at least eight weeks. I'll let you know how it turns out.
  12. I have been cold crashing all my brews now for several years. Probably about a dozen or so. A couple I didn't get around to bottling for almost a week. It didn't seem to have any adverse effects. In fact I think it was better the longer I cold crashed.
  13. Thanks for the info. A couple of recipes I really like I would like more "hoppiness" in the final product. This will help a lot. Thanks again.
  14. In MB recipes that have hop additions the directions usually state to add hops at flameout. What would be the result of boiling the hops for five minutes or so before flameout and then adding HME?
  15. I'm with you epete28. If it's tasty without any off flavors drink it! I do like some carbonation though.
  16. I'm a fan of chocolate stouts and I had an idea to change the Ole Mole Stout. Brew it according to instructions leaving out the cayenne as I'm not fond of hot pepper in my beer. At bottling add the espresso like in the Sunday Morning Coming Down. Whatcha' think?
  17. Uh oh!. I was bottling a brew about three weeks ago and ran out of bottles. I sanitized a couple and filled them with beer. I realized just before I capped them I forgot the priming sugar. I added it anyway. Are these bottles going to go tango uniform?
  18. I got started in home brewing with MrBeer. Even the worst thing I brewed with MrBeer was better than anything I bought at the grocery store. The first batch I made was CAL and to me it was like PBR which is about as low as you can go with a commercial brew. Brewing different styles has opened my horizons to the almost limitless possibilities of beer styles and the amazing tastes, textures etc. I have given several people samples of my brews to try. Not one has ever said it was not good. They all said it was excellent. There are some stalwarts that wont drink anything other than a particular brand from the major commercial breweries (you know who). But I'm working on them. I extol the advantages of brewing your own even if it's "only HME". The results are still better than anything your can buy OTC. And sometimes even as good as some of the all grain brewers and micro-breweries. Just my 2 cents worth.
  19. I started brewing with MrBeer. I've brewed several amber and dark HME. I've discovered through this process that I prefer dark brews particularly porters and stouts. I also like amber and red ales like Rocket's Red Glare. My favorite so far is Nilla Porter. If there was only one brew it would be Nilla Porter for me.
