  1. Fermented the Bavarian Weissbier at 73F for 2 weeks (only 2nd batch). When I went to bottle it, had issues with the beer foaming and was slightly carbonated. Did not happen with the Pilsner I had done previously. Tasted fine (like a wheat beer should). Is there something wrong with the beer, was it not ready to bottle, could the vents have plugged not allowing the CO2 to escape during fermentation?
  2. My first attempt at brewing and my carbonation time is up today. All of my bottles but 3 are rock hard. Should I put these rock hard ones in the fridge now and leave the soft ones for another few days or a week until they are rock hard. Or should the soft ones be considered a casualty of war?
