  4. Our newest Winter Seasonal has been released! Introducing our Baltic Porter! A traditional beer from countries bordering the Baltic Sea based on English porters and influenced by Russian Imperial Stouts, this Baltic Porter exhibits a dark chocolate color with crimson hues and a thick persistent tan head. The rich, malty, sweetness balances with a roasted flavor ad hints of caramel. Exhibiting a complex aroma or raisins and cherries complimented by a warming, smooth mouthfeel finishing with a hint of licorice. NOTE: While these beers are traditionally brewed with a lager yeast, they can also be brewed with an ale yeast. Because ales are easier to brew, we have included the S-04 with these kits. However, you can save the S-04 for another beer and pick up a pack of Saflager S-23 and ferment at lager temps if you would prefer a more traditional Baltic Porter. If using an ale yeast, it is best to ferment at the lowest temp you can go. The S-04 can actually handle temps as low as 54 F without going dormant so I recommend around 60-70 for this beer (the lower, the better).   5. First off, Hello. Long time lurker, occasional brewer, first time poster. So, I like many of you, I decided that the recent sale of the 2013 Winter Seasonal Belgian Spiced Ale was too good of a deal to pass up. That being said, I am just never one to let well enough alone, so in addition to the 3.75lb can of HME I threw in a pouch of Smooth LME. Other wise I brewed it precisely as instructed. Boy, those little guys from Safbrew went to town and the Krausen was as far as it could go and stay in the LBK. Anyway, enough small talk. I unlike some of you, I prefer to rack my beer off the yeast into a brightening vessel (also known as a secondary) and additionally I batch prime, simply for no other reason than I like my beer to be as clear as I can get (short of "fining"). Reading the thread on the community pre-sale I noticed it was put out that the spice contained orange and clove. I love orange and clove flavors in my beer! My concern: by adding the smooth LME is there any potential of pushing down the orange/clove (and other spice) flavors? Would putting fresh orange zest (sanitized of course) into the brightening container be too much? Or should I just use some sanitized tongs and transfer the spice pouch over to the secondary?
  6. I just got done tasting the 2013 Winter Seasonal, the Belgian Spiced Ale. That was a really delicious beer and i already ordered another one. I wanted to add a LME to the next batch but not sure which one would go best with this one. Anyone thinking about brewing this should jump on it ASAP if they like a good tast spiced ale, kind of like a Sam Adams Cold Snap. Thanks for any advice
  7. So I'm very new to brewing...i have only made the American Classic Light and it's carbonating now. I am a huge fan of pumpkin beers and really wanted to try my hand at it. I decided to try Pumpkin Rising based on the reviews and description. I know I probably won't come out with the absolute best first try, but I want to try to tweak and perfect it by fall. SO ANYWAY. I went to a few stores today and could not find Pumpkin puree or mulling spices....and "yes honey i checked in the baking aisles." The only thing I could find was an imitation pumpkin extract and 100% Pure Pumpkin. Can I use these and if not what would you recommend. I checked Wal-Mart and Aldi. Tomorrow I'm going to look at Giant Eagle(Pittsburgh based Supermarket). Well Off to the coal mine...i'll be anxiously waiting to see all of your suggestions and replies! Also any tips on making a great Pumpkin beer. I'm a huge fan of Jack-O-Travelers. Thanks, Tim
