How long is too long in the LBK?

Recommended Posts

...theoretically speaking, of course.

Life has been insanely busy over the past two months, so I've had a batch of Novocaine in my LBK for 8 weeks.

I just cracked the lid tonight and it smells very barleywine-ish, so that's a good sign.

Any ill effects of leaving it in there so long? I'm going to bottle tomorrow unless you guys talk me out of it. Please advise. :chug:

Should be good to go. The CO2 keeps out the O2, so you should be golden. I had a similar situation for one of my Australian Dark Lager batches. Spent 8 weeks in the LBK fermentation stage due to a hectic schedule. It came out great. Go for it IMHO. ;)

For most beers 3 week in the LBK is enough. After 4 weeks you risk off flavors. Your beer is a "Big" beer so you should be OK. Cheers & Brew On. :gulp:
