Yeast recommendation for Oktoberfest ... 3 options

I have :
Safale s-04 11.5gr
Muntons standard 6gr. (could use 2 of those)
Mr Beer dry yeast 5gr

Actually also have a Safbrew T-58 11.5gr (but dont think thats a good option)

The S-04 is an English yeast and will have that character. Nothing wrong with that, but that will give you more of that bready character. I used some in my Dry Irish Stout and it was very evident. I plan on making an English Mild with the Octoberfest using S-04 and adding some Fuggles or East Kent Goldings. But if you want a cleaner yeast profile I think you could try the MB or Safale US-05.

I am brewing my second batch of Oktoberfest and used the Safale US-05 both times with very good results. The first batch was clear, amber, not too malty or sweet, fairly crisp finish, nice head to the end, medium body. I also added a pound of light DME to the MB extract and fermented 21 days 64-66 dF. It was in the bottle about six weeks when I had the first one. I hope my second batch is as good.
