Why hydrate dry yeast?

Recommended Posts

Is there a benefit to hydrating dry yeast before pitching. I've just pitched dry and seems to work ok.

In simple terms, you wake up the yeast so they are ready to get to work a little faster.
There's lots of opinions on this and much may depend on the size of the beer (gravity) that is being made but, the sooner the yeast go to work, the better things are.

Faster start to fermentation decreases chances of infections taking hold.
