Can I " over ferment " ????

I was going to bottle today but its not a good day. So next week I'm on vacation and I would like to do it then.
Right now it's 31/2 weeks - B)B)

You should be fine. Not too big of a deal to wait 4-5 weeks to bottle.

Except, your fermenter won't have a fresh batch for 4-5 weeks... :dry:

If you have room, take the LBK and stick it in the fridge for while you're gone.

"Cold-crashing" it like that 5-7 days will clear the beer, firm up the trub layer on the bottom, and result in much less yeast trub in the bottom of each bottle once you are done carbing/conditioning.

As Big Floyd said, cold crash till you get back . You will have a cleaner beer . I normally would have pulled it off the yeast cake at 2weeks but crashing it you should be ok.

I've gone over with no problems, I just cold crashed for 10 days with no ill affects whilst I was gone.
