Oktoberfest

I'm gonna start my Oktoberfest... how long should I wait for it to brew before bottling, and so on...?

Generally, 3 weeks for fermentation before bottling, to give the yeast time to clean up their initial byproducts that otherwise are off-flavors.  Then, 4 weeks at room temperature for carbonating and conditioning before calling the beer "done", and then at least a couple of days in the refrigerator before drinking.
