Safale S-05

I want to a single packet on two separate brews, both are low alcohol. According to the packet, I should only use half the yeast (which is good because it saves me money).

1. How should I safely store the 2nd half of my yeast? I would assume in the fridge

2. How long is it good for? I would like to store for 3 weeks, then do my 2nd batch

I'd put the unused half of the packet in a ziploc bag, and put the bag in the fridge. In 3 weeks I don't think it will come to any harm.

Usually good for that time. The yeast companies say 1-2 weeks, but I've used them after 4 weeks and still had good success in low ABV beers.

I have sealed my leftover in a ziplock , store in the freezer , and rehydrate b4 using and have had good success with 04,05,and Notty after  4-5 weeks.

I would echo Diane. I just fold and tape the top of the yeast packet and try and use it within a month. Lately, my attenuation with the US-05 has been inconsistent. I only got slightly less than 65% with it recently in a low gravity pale ale, but the resultant beer just won a silver.
