Funny that you posted this. I just got my copy of BYO, saw that article and thought of you.
Did my first hop stand today actually after some studying last night. Made the brew de ale ze bub with the 1/2 oz of centennial hops. Did a 45 minute hop stand at about 170 degrees give or take. Really liked the process. I thought it slowed down brew day a bit and allowed me plenty of time to proof my yeast and watch the packers lose.
Might have thought of slym once or twice and said to myself "hops go commando"
Yes, a hop-stand definitely adds time to the brew-day. I say, it's worth it.
