yeast for stout question

had an extra st Patrick day stout so I grabbed some cocoa nibs some lactose sugar couple robust LME's and realized I forgot about the yeast wanted to use safale-04 bit don't have it... Have safale -05 and plenty of Mr beer yeasts... Which would y'all use????

04 fermented warmish makes fruity esters.. not so much fermented on the cool side. kept 58-64f does a great job and stays mostly clean.

 

05 I think is chico strain... keep it in ale temps ie 64-68 ferments clean.. very little ester production. may not be as aggressive a fermenter as 04 but works well.

 

mr beer / cooper yeast will do the job just as well as the rest but keep it around 64f to keep acetaldehyde (green apple esters) down.  if it gets warmish youll likely end up with cidery flavors.

 

myself? I would use the 05 if I didn't have the 04.
