US-04 or US-05

Question for the more seasoned brewers.

Say you won a lifetime supply of beer yeast in a contest.

You can choose only one yeast, Safale US-04 OR Safale US-05.

Which would you choose ? and why ?

US-05.  For what I brew, I can use it in almost everything... almost. :)

US-05 is a great go-to yeast for most non-specialty beers.  I wouldn't use it for specialty beers like wheats, lagers or Belgian.

US-05 because it fits a lot more styles than US-04. Basically an American strain vs a British strain

That's not even a debatable questions.  US-05 is a yeast that is very clean.  There is virtually no other yeast as clean.

I like my yeast like I like my women, a little on the trashy side...

 

no but for real. I like US-05 but I also like the esters that 04 provides. I like to taste my yeast.

Question was "lifetime supply".  If I look at the dozen or so beers I've made (non-Mr. Beer recipes), US-05 is the most used yeast.  Therefore, I would pick it as I get more use over a lifetime.

gotta agree. lifetime? us05. it's the wonder bread of yeast but you can use it in just about any ale. the ale will just lack any yeast esters. us04 is a monster yeast but if it gets warm it makes fruity apple-y flavors that i dont like.

MaryAnn for sure, I always thought you would catch something from Ginger you wouldn't be able to get rid of.

Came across other brewers on different sites who use US04 as their go to yeast.

When would you use US04 over US05 ??

Use US-04 when you want to leave your beer a little sweeter and more full bodied.  It will not attenuate quite as much as 05 will.

 

Definately MaryAnn, Ginger was too high maintenance for me.
